Recipe: Sweet Onion Bisque
Many of you know that I travel to Nashville, Tennessee often for business. In the work that I do with the college savings plan, we have partnered up with TN and that requires us to travel there from time to time. Often times we have working lunches at a fabulous place called The Capitol Grille located at the famous Hermitage Hotel.
The restaurant is by far one of the best places I have ever eaten and there is a reason why. Their Sweet Onion Bisque is amazing. I have never has a soup so good. I am always recommending it to people when we go. This soup consists of sweet onions, smoked bacon, chives, and Brie grilled cheese. Who doesn’t like grilled cheese and soup?
Needless to say, I decided to see if I could browse the internet and find this recipe thinking to myself "Yeeeeah Riiiiight." BUT I lucked out! I found the recipe on a website called Restaurant Hospitality and I thought that I would give it a try and share with you. The recipe is fairly simple, just time consuming.
Sweet Onion Bisque
Ingredients:
• 4 sweet onions, medium-diced large
• 5 Tbsp. whole butter
• 1/2 cup heavy cream
• salt and white pepper-to taste
• smoked bacon-as desired
• chives-as desired
• Brie grilled cheese sandwich-as desired
Cooking Instructions:
• Cut onions and simmer in a large pot on very low heat for 5 hours (See I told you it was time consuming)
• Add simmered onions to the blender and puree until onions are smooth
• Add the heavy cream to taste
• Season with the salt and white pepper
• Garnish the bowl with the smoked bacon, chives, and a triangle of Brie grilled cheese (or desired cheese) sandwich.

How did it turn out?
My mom and Walt loved it, so I guess it turned out well lol. You have to like onions though! LOL
